Eats: Taco Night
Friday, February 18, 2011 at 4:04PM Last night was Taco night. A fav at mi casa. Considering the Husband can eat Mexican about 8 times a week, I knew it would be a hit. I got some organic beef that the Husband cooked up for himself and the kids and I cut up an assortment of veggies. Now, the old self would fry up the tortillas really well, slather on some beans, meat, and cheese and gobble that taco down with a side of salt. The green (as in novice) me, looked in the fridge and knew I had to get creative with what to put on my tacos. I let the colorful veggies choose me when picking them out. Lucky girl! I had tomatoes, bell pepper, corn, cucumber, scallions, avocado, lettuce, and olives. The result, delish! Meanwhile, the Husband found a new and improved way of making his tacos, slathering Parmesan cheese on the lightly fried tortilla. I will not give up, I will not give up...


Yummy Tacos. Didn't even miss the cheese but had to add a pinch of salt.
